Commonly $1 million general liability, $1 million auto, statutory workers' comp, an umbrella, and a third-party crime bond, with additional insured, primary and noncontributory, and waiver of subrogation endorsements.

Is employee theft from a client covered by my crime policy?

Only if it includes third-party (client) coverage. Standard employee dishonesty coverage protects your own property, not your client's.
